Tasty...



I've made this lentil salad a lot recently. It started off with just lentils, coriander, rocket, sultanas and walnuts. I now add goats cheese and my own maple syrup dressing too. 

It is best to soak your lentils over night.

I'll be eating this tonight, when I get back from yoga.


PS- don't think I being health freak and totally pious (those that know me, know this is not true...)-I am just choosing not to blog about the super sweet banana and honey muffins I made last night...that were totally delish!

sticky fingers

This evening I made my first few batches of cooked play dough (first without supervised help from an adult, that is!).




I  am taking it tomorrow; I am visiting the project Kibera Mpra Mtaani again, with my friend Anisa. Should be fun!

The week

This week has passed in a bit of a haze: the Jinja half seems like an age ago and celebrating the lovely Marie's birthday by stuffing ourselves with seafood is a distant memory.

I haven't been blogging or running. But I did dance under the stars twice this weekend. I also had friends over for sundowners, drank my last bottle of special wine brought back from the vineyards in South Africa under the stars, swam in the sunshine and helped a friend celebrate her move to married life.

Red Sky at Night

I managed to fit 8 guests for Spanish cook-club in my tiny apartment last week. This in itself deserves a post.
A table, chairs, spoons, plates and bowls were borrowed from neighbours and friends.

As I was setting up home, the African sun set and the colours matched all the fruit in the sangria.









I have only time for one more Kampala cook club...but I love the theme so I cannot wait! Next month it will be Robyn's favourite dishes...horray...hand clap for Stacy who thought of it!

A few images from my weekend.








1.  Evidence of the dusty trail run on Sunday - a 'fun' 10km run for charity.
2.  I feel like I have spent a lot of my weekend on the phone to call centres trying to sort out my flight to Cape Town. If expedia don't sort it out, then maybe I should just try out this Inn; I would save on flights as it is only round the corner!!
3. My first attempt at bread. Soda bread for our Irish cook club.
4. Being Irish for the night - potatoes, potatoes and more potatoes.

sailors, laps and cupcakes

My week has not been the best here in Uganda. I need a city-break...as in, a break from the city! People can be so much meaner here. I lost my patience in the bank and had to turn around to check that I didn't know anybody...before I carried on my rant.

Maybe because of this, my day was even sweeter today! There were lots of beautiful smiles.

1. My class had their assembly. They were explorers on the galleon Victoria. They were excited and happy; I was relieved!

2. I swam laps at the country club, unable to face a run. It was fun and tiring- and as I dried in the sun talking to my friend, I wondered, why I haven't been doing that in my 16 months in Kampala!

3. I have been wanting to bake all week-so I made six fluffy and light vanilla cupcakes. There are now four.

Kooking in Kampala

Kook club is BACK!

I was introduced to the idea of a cook club in Kuwait by my lovely friend Jane. So Jane (head chef), Kirsten, Ange and I would get together and plan the all important theme and menu. Previous themes have been; Asian Fusion, Italian and a weird throw-back to 1960s James Bond Apres Alps (!!the food was just as bad as the outfits!!!) There were rules, of course, in our Kuwait Kook Club, that we religiously followed; only cook something you have never cooked before, take turns cooking the meat dish, always invite a different guest couple and most importantly always invite a single man for Robyn to entertain...I liked that rule the best!!

I then continued this idea in Kampala, with less cooks (as we have smaller apartments) but the same idea. However the other cooks were not that enthusiastic about dressing-up in the theme, so we dropped that. Cooks have left and a new year has brought together a new Kook Club. Now menu ideas have been flying back and forth and we are all educating ourselves on what a Damper is.We are busy drawing up the menus and writing the guest list as well as designing the all important themed costumes!
